Creating a hearty meal is easy with Harvestime and this winning recipe

We all appreciate a quick meal that’s big on taste and easy on the waist – even better when it’s easy on the wallet too.

Readers have been tuning in to Rate My Plate weekly for recipe inspiration and we’re loving the opportunity to see how South Africa shares smiles around the dinner table.

Pork Fillet & Baked Veggies 

Serves 3-4 | cooking: 40-60 min


Pork fillet

30ml (2T) paprika

30ml (2T) chilli flakes

30ml (2T) salt

45ml (3T) black pepper

30ml (2T) olive oil

45ml (3T) soy sauce

500g pork fillet

barbecue sauce, to serve

Baked veggies

3 knobs of butter

500g (2c) Harvestime Country Mix

30ml (2T) crushed garlic

1 packet cheese sauce 


4 medium potatoes, peeled

30ml (2T) crushed garlic

30ml (2T) olive oil



  • Preheat the oven to 180 °C.

Pork fillet

  • Mix the spices, salt, pepper, olive oil and soy sauce in a bowl.
  • Rub the mixture over the fillet, place it in an oven dish and put it in the oven.
  • Cooking time will vary depending on how you enjoy your meat (30-40) minutes for medium rare or 40-60 minutes for well done.

Baked veggies

  • Heat the butter in a pan and sauté the Harvestime Country Mix veggies until defrosted. Add the garlic and remove from the heat.
  • Prepare the cheese sauce according to the instructions on the packet.
  • Put the veggies in an oven dish, leaving space on the side.
  • Pour a few tablespoons of the cheese sauce over and set aside.


  • Boil the potatoes in a pot of lightly salted water until done. Drain and add the crushed garlic and olive oil.
  • Put the potatoes in the empty space on the veggie dish and pop it in the oven for 10 minutes.
  • Once the pork is cooked, cut it into thin slices. Pour the barbecue sauce over and serve with the veggies and potatoes.
